To make your own kefir, you will need a Kefirko fermentation jar , Protero Kefir Whey or Pasture Whey, milk or water, and of course kefir cultures - unless you are already using kefir yogurt.

Which milk is suitable for your homemade kefir?

The best milks for making your high-protein kefir are full-fat, grass-fed milk and kefir cultures, or a good organic kefir yogurt. Cow's milk not only gives you a delicious kefir, but also a thicker consistency. Alternatively, goat's milk is also a good option. Its different consistency from cow's milk results in a thinner kefir.

Another option for your kefir is to make it with sheep's milk. Not only does it taste sweeter than cow's milk, but it also contains more protein. Therefore, your kefir made with sheep's milk will be both thicker and creamier than one made with cow's milk.

Caution with lactose-free milk! It is not suitable for making homemade kefir, as the lactase it contains inhibits fermentation.

5 steps to homemade kefir

Great, now that you have all the ingredients ready, we can start making it!

  1. Mix 3 tablespoons of Protero Kefir or Weide Whey with about 300 ml of kefir yogurt and shake well.
  2. Then pour the mixture into the fermentation jar.
  3. Open the lid of the fermentation jar slightly to encourage fermentation and let it ferment for 24 hours at room temperature. After 24 hours, fermentation is complete and the milk should be slightly thicker and more acidic.
  4. Remove the lid and stir the kefir with a stirring stick.
  5. Done. Now they can drink it directly from the glass or transfer it to a different container.

After fermentation, place the jar in an airtight container in the refrigerator for another 24 hours to allow the bacteria to multiply further. The Kefirko Second Fermentation Jar is suitable for this purpose.
